Chia Pudding

Ingredients: 6 tablespoons chia seeds, 6 small 200ml jars or one large bowl, 2 cups Bonsoy or almond milk, 3 tsp vanilla extract (or one vanilla bean). Banana, pecans, strawberries, flaked almonds to serve. 

Makes 6 small cups or one large bowl to share

  • Place 1 tablespoon chia seeds into each container (or 6 tablespoons into the large bowl). 
  • Add 1/2 teaspoon of vanilla extract to each cup (or 3 teaspoons to large bowl)
  • Cover chia seeds with 1/3 cup of Bonsoy or almond milk (eg Nutty Bruce). 
  • Stir well and cover. 
  • Refridgerate overnight.
  • Serve with sliced banana and pecans or strawberries and flaked almonds.

Chocolate Pie

Ingredients for base : 1/2cup pitted dates finely chopped, 1 cup macadamias finely chopped, 1/2 cup raw cashews, finely chopped, 1/2tsp celtic sea salt, 1 cup shredded coconut, 3 tablespoons coconut oil, 2 tsp orange zest

Ingredients for filling: 4 medium size avocados, 3/4 cup raw cacao powder, 1tsp vanilla extract, 1/4 cup xylitol or erythritol, 2 tablespoons cacao butter (melted), and berries or banana to serve. 

Method:

  • Base : combine all ingredients and press into pie plate, chill for 30mins.
  • Topping : blend all ingredients until smooth and creamy, spread over base and allow to set for 2 hours. Decorate and enjoy!
